wherein we take a drive and dream of cookies

today we drove the stretch from almost regina up to saskatoon. (and before you regina folk get worked up because we didn't stop in, we weren't actually in regina. our pastors' retreat was at dallas valley.) you know you don't live in a sightseeing destination when the highlight of a roadtrip is seeing that A&W in the middle of nowhere, aka Davidson (a community in motion!) ... click on the A&W link and you'll see what i mean :)

however, on a brighter note, i did see some really cute donkeys in a field with some cows. and when we passed Blackstrap i had to laugh because it made me think of janice's blog and the awesome picture she has posted of our 'prairie mountain'.

the best part was coming home and realizing there were enough leftovers in the fridge to provide us with meals for the rest of the day so i didn't have to cook anything. mmm, leftover kraft dinner :) unfortunately i had left the pumpkin pie i baked on saturday (or what was left of it...) out on the counter instead of putting it in the fridge and it had started to go bad so i had to throw it out. isn't pumpkin pie one of the best things? i should bake with pumpkin more often. pumpkin loaves. pumpkin pies. oh, i have a great recipe for pumpkin gingersnaps!


Pumpkin Gingersnaps
1 cup margarine or butter
2 cups sugar
1 egg
1/2 cup molasses
1 cup pumpkin puree
4 cups flour
2 tsp baking soda
1.5 tsp ginger
1 tsp cinnamon
1/4 tsp cloves
sugar for rolling

Cream margarine and sugar. Beat in egg, molasses, and pumpkin. Mix flour, baking soda, and spices and stir into pumpkin mixture. Chill. Shape into 1 inch balls. Roll in sugar. Bake at 350 on ungreased sheet for 15-18 minutes. Makes about 7 dozen.

7 Dozen!! that's a lot of cookies.

Aw, I can't believe you were so close!! (I know that Regina comment was for me!) Just think, we were only 15 minutes away from eachother! Can't wait to see you guys again! Love ya
